Like most of the people on this planet, I’m just fascinated by CHOCOLATE and all the goodness you can do with it!
Could you imagine a world without chocolate?!
While I was traveling, I met so many people from different corners of the world. And as I’m always trying to include everybody too try my creations, I created this chocolate brownie that is fully vegan what makes it a lot easier to offer to people with diets and allergies. And guys… Ofcourse you can use a gluten free flour for the perfect Gluten-Free variation.
Okay! Are you ready to start cooking and let your friends/ family /in-laws taste a little piece of heaven?! This amazing chocolate brownie will leave you drooling for days 😉
What do you need:
- 100g coconut oil
- 1/2 cup dark vegan chocolate
- 1/2 cup sugar
- 1 cup soy-milk
- 1/4 cup cocoa powder
- 1 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 cup dried cranberries
- 1/2 cup white vegan chocolate
- 1/4 cup nuts, seeds and dried fruit mix (Optional)
Step 2. When the mixture looks like you just want to lick the bowl clean you can add the milk.
Step 3. After you stirred the mixture so it’s looking like a chocolate milk you can add the cocoa power and stir until combined.
Step 4. Add the baking powder and flour 1/2 cup at a time until nice and smooth. You want the mixture to look gooey but still quite liquid… like a thick sauce.
Step 5. Add the dried cranberries to the mixture and these will serve as little sweet and sour bombs in the brownie.
Step 6. Pour the mixture in a baking tray by choice and pop it in a pre heated oven at 180c for about 30 – 40 min or until a skewer inserted in the middle comes out clean.
Step 7. Meanwhile let the brownie cool down. Add white chocolate to a heatproof bowl and let it melt above a small saucepan of simmering water.
Step 8. Pour the white chocolate on top of the brownie and just let it drip its way down. Top it off with nuts, seeds and dried fruits.
There you have it! A fancy brownie you can bring to your old folks or just surprise your lover with 😉
